End of Summer

Just because summer is coming to an end with Labor Day here, doesn't mean we must stop having fun. And we all know that the warm hot temperatures won't go away that easily here in Phoenix. While reading through some of my favorite reads this weekend, I'm trying to put together some more yummy dishes to make, and making some of the fabulous recipes I've found through a couple great blogs. Heather over at Gerber Days has some great recipes and videos to go along with of some yummy ideas. I'm going to try her granola recipe; I just love having a snack around and *bonus* it is healthy! Also over at Little House of Veggies there are a ton of great recipes she's come up with that sound amazing. The first thing on my list will be the almond milk. I'm always looking for more lactose friendly things and I'm super excited about this one. It sounds and looks pretty easy to make. The newest recipe: Strawberry Spring Rolls is just mouth-watering so I'm going to give that a go. 

I love reading other blogs and being inspired. I love sharing what I'm doing but also love to read and keep up with what everyone else is doing.

**Update: Just wanted to share with you what I made for dinner tonight, minus the picture. I'll find another picture sometime because I'm sure to make this again! I made this in a hurry before work, so my dinner was enjoyed at work tonight. I steamed white rice and steamed some snow peas, carrots and yellow bell pepper. Yum! Had a nice color scheme to it. I love fresh steamed veggies.

Speaking of recipes if you want the Torilla soup recipe I forgot to give it to you...

1 lb of ckn cut into strips
1 can reduced sodium ckn broth
1 can chopped tomatoes
1/2 cup water
1 tsp salt
1 tsp chili powder
1 jalapeƱo

bring ckn, broth, tomatoes & water to a boild over med-hihg heart. reduce heat to med-low and simmer until ckn is cook through

add the salt chili powder and jalapeƱos to taste. I garnished mine with all th dairy that I try to kill you with...so not recommended but the world of garnishes is yours!

Thanks a bunch girl!! I will definitely try this out. I want to make some soups (found a couple great recipes) but it's just too darn hot here right now. And I'll pass on the dairy :) Love you!!
