French Breakfast Muffins

I really wanted to make muffins for some time, since they are so expensive to buy. I went out and got a foil muffin pan and some cupcake cups and was ready to go! Found this recipe which turned out good, though for next time I want to add syrup to the batter to make it taste more like french toast, breakfast type of a muffin. These muffins are great in the morning or afternoon snack.

1-1/2 cup flour
1/2 cup sugar
1-1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1/8 teaspoon salt
1 egg
1/2 cup milk
1/3 cup margarine, melted
1/4 cup sugar
1/2 teaspoon cinnamon
1/4 cup margarine, melted

Mix flour, 1/2 cup sugar, baking powder, nutmeg and salt. In another bowl beat egg, stir in milk and 1/3 cup melted margarine. Add this egg mixture to the flour mix; batter may be lumpy. This is where I added a little vanilla extract, which was great, and next time this is where I will add syrup. Pour into greasedd muffin cups, filling about 2/3 full. Bake at 350 degrees for 25-30 minutes. In another bowl mix 1/4 cup sugar and 1/2 teaspoon cinnamon. When muffins come out of the oven, dip tops into 1/4 cup melted margarine then into the cinnamon-sugar mix.
